White Rabbit's Blueberry Preserve
We blend our own organically grown blueberries - varieties chosen to most resemble the tiny wild blueberries of New England - to make this tasty preserve.
We cook the berries with a little lemon juice and just enough sugar to ensure a soft set. We don't add any pectin or thickeners, so this preserve is bursting with whole berries in a rich, dark blueberry sauce, not a solid "gel." Since we use only half the amount of sugar as in a conventional jam, the flavor is more like a blueberry pie. Enjoy it spooned on waffles, pancake, crepes, or French toast; in hot and cold cereals; with ice cream, yogurt, or ricotta or cream cheese, and with toast and muffins.
