The Mad Hatter's Pepper Preserve
Our heirloom Italian peppers, sun-ripened to full flavor and deep red hue, are the heart of this preserve. Our spicy Cayenne peppers provide sparks of heat, and our lemon basil vinegar adds a spritely tartness.
This softly-set preserve is ideal with hors d'oeuvres and on a cheese platter. It also makes a terrific glaze for chicken, pork, and shrimp, and dresses up any humble sandwich.
It’s pleasantly zippy, made with 3/4 Italian Red Corno di Toro peppers and 1/4 hot Cayenne peppers.
As with all our preserves, we add no pectin or thickeners of any kind, and use only about half the sugar of conventionally made jams and jellies.
